Eggs that defy convention

Eggs are a versatile food that can be prepared in many ways. But while it might be common for people to experiment with omelets, few fans of eggs have likely strayed as far from the egg norm as the following recipe for “Mediterranean Egg Mug” from Lisa Lillien’s “Clean & Hungry” (St. Martin’s Press).
Mediterranean Egg Mug
Makes 1 serving
1 cup chopped spinach leaves
¼ cup seeded and chopped tomato
2 tablespoons chopped red onion
¾ cup (about 6 large) egg whites
1/8 teaspoon oregano
Dash black pepper
2 tablespoons crumbled feta cheese
In the microwave
1. Spray a large microwave-safe mug with nonstick spray. Add spinach, tomato and onion. Microwave for 1 minute, or until spinach has wilted and tomato and onion have slightly softened.
2. Blot away excess moisture. Add egg whites, oregano and pepper. Stir, and microwave for 1 minute.
3. Mix in feta cheese. Microwave for 1 more minute, or until set.
In a skillet
1. Bring a skillet sprayed with nonstick spray to medium heat. Cook and stir tomato and onion until slightly softened and lightly browned, about 3 minutes.
2. Add spinach, and cook and stir until wilted, about 1 minute.
3. Add egg whites, oregano and pepper. Cook and scramble until veggies are soft and egg whites are fully cooked, about 2 minutes.
4. Remove from heat and stir in cheese.
