A Barnard, Missouri, baker is getting ready to share her cookie-decorating secrets.

Heidi Klamm started Baked. By Heidi last October. The self-taught baker creates intricate royal-icing designs on sugar cookies ranging from custom birthday orders to holiday and sports designs.

“People will call me an artist and I’m still shocked by that,” Klamm said. “To me, that’s a really powerful word, so I don’t consider myself an artist. But then I look at my stuff and I’m like, I guess I am.”

What started as a hobby has since grown into a business. Once custom orders started taking off, Klamm said she had to learn how many orders she could take without overwhelming herself.

“The most I have done has been 68 dozen in a week and that’s way too much for one person,” she said. “I like keeping it around 20, 25, and that’s my ‘I’m not stressed, I can handle everything’ limit.”

Klamm is currently preparing to hold her first-ever cookie decorating class on Oct. 12 from 11 a.m. to 1 p.m. at River Bluff Brewing. Participants will decorate Halloween-themed cookies using prepared icing and cookies.

“I’ll have all the colors mixed, I’ll have the cookies baked, everything they need is going to be in a little

packet,” Klamm said. “I’ll be teaching the border and the flood, just because I won’t have enough time to teach how I make the icing.”

Klamm uses a family sugar cookie recipe and two different kinds of royal icing: a thicker type to create outlines and a thinner mix to fill out the cookie.

“My piping, my border, is kind of like a barrier that holds it all in, then my flood is a lot thinner,” she said. “I’ll shake the bowl and if it spreads out evenly, it’s done and I’ll start putting it in my (piping) bags.”

Instagram, Google and YouTube were Klamm’s biggest help when she first started decorating cookies.

“I have a projector for logos and stuff like that, but for the writing, I mostly freehand all of that and that’s just practice on a piece of paper with some icing,” Klamm said.
