I'm what you might call a "junk food vegetarian." I don't eat meat, but I don't eat a lot of fruits and vegetables either. Plus, I'm not much of a cook. Chickpea salad sandwiches are an easy, tasty way for me to have nutritious lunches at work. The recipe is as follows:

- Two cans of chickpeas

- A couple generous dollops of Greek yogurt

- Two stalks of celery, chopped

- A sprinkle of blue cheese crumbles

- A dash of buffalo sauce

Mash the chickpeas in a bowl, then combine all ingredients and stir.

I love to exercise, whether it be running, cycling or weightlifting. But about two months ago, I hit a plateau. I was no longer progressing in my workouts and I was slowly losing motivation. I knew I needed to try something new, yet still challenging. That's when I began taking CrossFit classes. I was skeptical at first, but now I am so thankful I got started. Every time I take a class, I completely leave my comfort zone. The beautiful part about CrossFit is that you can work at your own pace and level. Just because my fitness level is different from the person next to me doesn't mean one of us is working any less harder than the other. The trainers and other members have been extremely welcoming and helpful since my first day. Joining a CrossFit gym reminded me that even though we may hit a wall when it comes to working out, there's people that will help us get over it.
