Taco Mac and Cheese

Preheat oven to 375 degrees. Makes eight servings.


10 ounces macaroni noodles

1 pound ground beef

1/4 cup diced onion

1 tablespoon minced garlic

1 cup salsa

1 ounce taco seasoning

8 ounces cream cheese

1 cup shredded taco blend cheese

Traditional taco toppings like lettuce and black olives


Spray non-stick cooking oil in casserole dish. Cook noodles according to directions. Set aside.

Brown hamburger, drain and add onions and garlic. Cook until onions are translucent and add taco seasoning and salsa.

Combine noodles, beef mixture, cream cheese and half a cup of shredded cheese and cook on low heat until melted. Place in casserole dish and top with remaining shredded cheese. Bake for 15 to 20 minutes. Add additional taco toppings as desired.

Orange Chicken and Rice


3 to 4 thawed chicken breasts

1 cup barbecue sauce

1 cup sweet orange marmalade

2 tablespoons soy sauce

1 cup white rice


Make rice according to directions on the box.

Combine sauces in a pan and cook on medium heat. Using kitchen shears, cube chicken breast and add to skillet. Cook until chicken is well covered and cooked through, approximately 10 minutes. Serve over rice. Makes four servings.

Tator Tot Casserole


1 pound hamburger

32-ounce bag tator tots (thawed)

2 cans cut green beans

2 cans cream of mushroom soup

3/4 cup chopped onion

2 cups shredded cheddar cheese


Preheat oven to 375 degrees. Spray non-stick cooking oil in casserole dish.

Brown hamburger and drain well. In the casserole dish, add half of the tator tots, one can of green beans, one can of cream of mushroom soup, half of the onions, shredded cheese and hamburger. Using a spatula, mix the ingredients together. Then add the remaining ingredients and mix well again.

Place in the oven and cook for 45 minutes or until tator tots are well done. Makes eight servings.

Simple Penne

and Broccoli


16-ounce box of penne pasta

2 12-ounce bags of broccoli florets

(steamable bags for added convenience)

1 stick of butter

Parmesan, salt and pepper to taste


Cook pasta according to directions. Microwave broccoli. Toss the pasta and broccoli with the butter, Parmesan and salt and pepper. You can add some grilled chicken for a little extra. Makes eight servings.
