Will Fox is glad to be back in St. Joseph and making pizza. The Kansas City man opened B Dough’s Pizza on Tuesday in the former Godfather’s Pizza location, 1329 S. Belt Highway. The eatery features baked appetizers, pasta, gourmet pizzas and a daily lunch buffet.
“I think we’ll be known for our dough,” he said.
Mr. Fox hopes to have a motto that the crust is so good you won’t throw it away. The recipe and preparation are both unique, inspired by a longtime restaurant owner in Bedford, Iowa.
“It was known to not give people indigestion,” Mr. Fox said.
Staff mix the ingredients from scratch every morning.
“I feel blessed to be one of the only people left to have it,” he said of the secret recipe.
Mr. Fox got his start in 1985 with Breadeaux Pizza in his hometown, Winterset, Iowa. By the time he came to St. Joseph to sell company franchises seven years later, he was part owner of 13 different pizza shops in Iowa.
He eventually left the pizza business. But it was during that 13-year hiatus that he envisioned his own pizzeria.
“I missed it,” Mr. Fox said. “So I decided to come back. I thought I could make a better pizza.”
He owns the eatery with his wife, Debbie Fox. Their two children, Eddie McKinley and Heather McKinley, help with the day-to-day operations.
B Dough’s Pizza is the first for the businessman, but he hopes it can become a franchise. He wants to create ways for others to be successful.
The new restaurant is open from 11 a.m. to 10 p.m. Sunday through Thursday, and from 11 a.m. to 11 p.m. Friday and Saturday. For more information, call (816) 232-4010.
