4 cups cucumber, seeds removed and sliced
1/4 cup red onion, very thinly sliced
1 avocado peeled, pit removed, then diced
1/4 cup fresh dill finely chopped
1/2 cup feta cheese crumbled
For the dressing:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Place the cucumbers, red onion, avocado, dill and feta cheese in a large bowl.
Place the olive oil, red wine vinegar, Dijon mustard, garlic powder, onion powder and salt and pepper in a small bowl. Whisk until combined.
Pour the dressing over the vegetables and toss gently to coat. Serve.
Add tomatoes and black olives as a twist.
